(d) Tyrosinase (polyphenol oxidase, catecholase) is a copper-containing oxidase which is widely distributed in plants, animals and man. It oxidizes tyrosine to the pigment melanin in mammals and causes the cut surfaces of many fruits and vegetables to darken (browning reactions).
